Philly Saute

As we continue through February and recipe month, I have another new recipe for you to try: Philly Saute.

This saute combines peppers and onions with your meat of choice to create the perfect combination that will leave your taste buds popping!
For serving, you have a ton of choices:
For toppings, I'd grab guacamole or avocado for starters. Kite Hill makes a great almond milk based cream cheese if you don't tolerate dairy or you can stick with regular full fat sour cream or shredded cheese.
For serving on something, I'd recommend:
1) Siete Foods or similar grain free tortillas/coconut wraps - these tortillas are amazing! Simply heat for 10 seconds in the microwave and load them up. Found online or at HyVee, Fresh Thyme, Natural Grocers, Whole Foods, and Open Harvest.
2) Simple Mills Artisan Bread Mix - make this mix into dinner rolls and serve the mixture over top! Yum! Found online or at HyVee, Fresh Thyme, Natural Grocers, Whole Foods, and Open Harvest.
3) Siete Foods Tortilla Chips - same as the tortillas but crunchy! Found online or at HyVee, Fresh Thyme, Natural Grocers, Whole Foods, and Open Harvest.
4) A big bowl of crunchy lettuce never can go wrong
Ingredients:
2 Tbsp Coconut Oil or Butter
3 Bell Peppers of choice (red, green, orange, yellow)
1 Jalapeno (optional)
8oz Mushrooms
1 Onion
2lbs Ribeye Steak (shredded cooked chicken and ground beef also work well!)
1 Tbsp Minced Garlic
1 Tbsp Chili Powder
2 Tsp Cumin
1 Tsp Paprika
1/2 Tsp Pepper
1 Tbsp Salt, divided
Directions:
Heat a large skillet over medium heat; add coconut oil (or fat of choice)
Slice the peppers and onion and half the salt to the pan and stir
Slice the mushrooms and add to the skillet; chop jalapeno if using and add as well
Cover and cook, stirring occasionally, for 7 minutes or until the peppers and onions are just tender
Add the meat of choice (unless using cooked chicken then wait another 5 minutes) and remaining spices
Cook until the meat no longer pink
Serve
