Hamburgers & Potato "Buns"
Welcome to May! All month long, I'll be sharing a new recipe to help kick off the spring and summer season.

This week, I'm sharing a repeat recipe from my kitchen that I start making as soon as it's warm enough for the grill. You can customize this recipe incredibly easily, and it will please anyone who likes a good ole hamburger!
Hamburgers & Potato "Buns"
Serves 4
Ingredients:
4 medium potatoes or sweet potatoes
1lb ground beef
2 Tbsp sea salt
2 Tbsp melted butter or coconut oil
1lb asparagus
Seasonings for hamburgers
Optional toppings:
Raw sauerkraut
Cheese (dairy or non-dairy)
Avocado or guacamole
Directions:
1. Preheat your grill and the oven to 400 degrees. Line a cookie sheet with parchment paper. 2. Cut the potatoes into 1/8"-1/4" slices width-wise so they resemble small circles. Place in a single layer on the cookie sheet. Cut the asparagus ends off and cut in half again. Brush with melted butter and sprinkle all the veggies with 1 Tbsp sea salt. 3. Bake veggies in the oven until tender, about 15-20 minutes, broiled the last 2 minutes if desired for crispiness. 4. Form the ground beef into either 4 patties or 8 mini patties. 5. Place on the grill once preheated and spinkle with remaining sea salt and any other seasonings. 6. Cook until the hamburgers reach your desired doneness and pull off the grill. 7. Take the potatoes out of the oven and form mini sandwiches with the toppings of your choice. Break apart the hamburgers as needed to fit between the potato "buns."
