Gluten Free Cookie Dough
Welcome to May! All month long, I'll be sharing a new recipe to help kick off the spring and summer season.

Today, I'm sharing a no-bake recipe for gluten-free cookie dough. It's easy to throw together (sometimes too easy), and as usual with my recipes, is highly customizable.
Gluten-Free Cookie Dough
Serves 1
Ingredients:
3 Tbsp cassava flour or tigernut flour (or a combo of both)
1-2 scoops Vital Proteins collagen peptides (optional)
1 Tbsp coconut oil, butter, or palm shortening (not regular shortening or margarine)
1 tsp raw honey
1-3 Tbsp canned coconut milk (unsweetened almond milk works too)
2 Tbsp shredded unsweetened coconut (optional)
2 Tbsp Enjoy Life Dark Chocolate Chips (optional)
Chopped raw nuts (optional)
Directions:
1. Combine the flour and collagen if using with the fat of choice. Cut in with a fork
2. Add in the honey and coconut flakes (if using)
3. Slowly add in the milk a bit at a time until the desired dough consistency is achieved
4. Stir in any other add-ins of choice
