Creamy Broccoli & Bacon Skillet
Welcome to May! All month long, I'll be sharing a new recipe to help kick off the spring and summer season.

Today, I'm sharing a recipe that includes ground pork and bacon in a creamy coconut sauce. Does that sound amazing?!
Creamy Broccoli & Bacon Skillet
Serves 3-4
Ingredients:
Sauce
1 cup full fat canned coconut milk
1/2 cup chicken or bone broth
2 tsp arrowroot starch (can omit if you don't have it - just won't be as thick of a sauce)
1 tsp salt
1/2 tsp lemon juice
Skillet
1 package bacon (sugar free if possible)
1lb ground pork
1lb broccoli (with stems) (can also use asparagus)
1 bunch lacinato kale
2 Tbsp butter or coconut oil
2 tsp sea salt
1 tsp garlic powder
1/2 tsp dried parsley
Directions:
1. In a large skillet over medium heat, cut the bacon into 1" pieces with kitchen scissors and add to the pan with the ground pork. Add a layer of sea salt
2. Cook until no longer pink. Remove to a plate to drain
3. Add the butter or coconut oil to the pan. Cut the broccoli into small florets and add to the pan. Take the stems and cut the sides off. Cut the core of the stem into 1/2" pieces and add to the skillet (optional). Chop kale and add to the pan
4. Add another layer of sea salt, cover, and cook the veggies until tender, about 8 minutes
5. Add the protein back in and make the sauce by combining all the ingredients in a bowl
6. Add sauce to the pan and cook 2-3 minutes or until it starts to thicken slightly
7. Serve and enjoy!
