Chia Seed Pudding
We are finishing up February as a recipe month with a simple, but taste treat to enjoy: Chia Seed Pudding.

If you haven't worked with chia seeds, they are a unique little seed! When left alone in a liquid, they puff and absorb the liquid, hence the creation of the pudding.
When buying chia seeds, make sure you DO NOT buy poppy seeds (speaking from experience). They are not the same thing (face palm).
To enjoy this pudding, you can serve it with chopped nuts, no sugar added almond/peanut butter, fruit, shredded coconut, toasted coconut, or anything else that suits you!
Ingredients:
1/4 Cup Chia Seeds
1.5 Cups Canned Light Coconut Milk (unsweetened almond milk works too)
1/4 Cup Shredded Coconut, Unsweetened (can be omitted)
1/4-1/2 Cup Chopped Raw Nuts (can be omitted)
Raw Honey or Pure Maple Syrup to taste, about 1-2 Tbsp
Directions:
In a container with a lid, combine all the ingredients except the chia seeds and stir well
Add in the seeds and stir
Cover and refrigerate at least an hour or overnight
