Crispy Potatoes with Sea Salt & Chives

For the month of November, I'm kicking off a new Holiday Recipe Series to get you set for the plethora of potlucks that will be coming your way in November and December!
Today, I'm sharing another side dish recipe that is a different take on the traditional potato recipe: Crispy Potatoes with Sea Salt and Chives.
This is a super versatile recipe that isn't just great for the holidays, but also for a quick side dish during the week.
When I made this recipe, I used small potatoes, but a full sized potato would work as well. I liked having more skin on the potatoes to get crispy, hence using the small potatoes.
Crispy Potatoes with Sea Salt and Chives
Ingredients:
1lb Baby Potatoes (fingerling or regular potatoes work too)
1/4 cup Coconut Oil or Butter
1 Tbsp Sea Salt
1/2 Tsp Garlic Powder
1/2 Tsp Black Pepper (optional)
2 Tbsp Dried Chives
Directions:
Heat a large skillet over medium heat and add the cooking fat
Cut the potatoes into bite sized pieces, about 3/4", keeping the skin on
Add potatoes to the skillet along with the salt, pepper, and garlic powder
Cook covered, stirring often, until the potatoes are tender, about 10 minutes (add more coconut oil or butter if the potatoes start to stick in the pan)
Once cooked through, place in a serving dish and sprinkle with additional sea salt and the chives
