Beef & Brussels Skillet

When I'm in a hurry for a meal lately, I've been turning to this super simple recipe that is easy to make ahead and stores/reheats really well. I've been eating it for breakfast, but it also works well for any other meal as well! You can make it PFC balanced by adding avocado or olives on top for some additional healthy fats! Plus, like most of my recipes, it is super customizable depending on your tastes and preferences.

Beef & Brussels Skillet

Ingredients:

  • 1lb Ground Beef

  • 1lb Brussel Sprouts (or buy them preshredded!)

  • 1 Tbsp Coconut Oil

  • 1-2 Tsp Sea Salt

Directions:

  1. Heat a large skillet over medium-high heat and add the coconut oil

  2. Slice the Brussel sprouts and add to the pan along with 1 tsp salt

  3. Cook covered, stirring occasionally for about 5 minutes

  4. Add the ground beef and remaining 1 tsp salt

  5. Continue to cook covered, stirring occasionally to break up the ground beef

  6. Once the meat is cooked through and the Brussel sprouts are tender

  7. Serve immediately or cool and store for later use

You can also easily double this recipe (I always do!).

Switch it up:

Use any ground meat or a combination of your favorites: ground pork, ground pork + beef, ground chicken (not 99% lean), or ground turkey (not 99% lean). Oh and a friendly reminder, if you are choosing the ground turkey or chicken because you think it's healthier than ground beef, just remember red meat, saturated fat, and cholesterol won't kill us! They have tons of nutrients (especially B vitamins) that makes it a superior choice.
