Sweet Potato, Guacamole, & Shrimp Appetizers

A couple of years ago, I came across a recipe for a simple sweet potato, guacamole, and shrimp appetizer that I made for a party we were hosting. Of course, over the years though, I've let the recipe become my own (aka reducing the ingredients and amount of work) because I simply don't like to follow recipes! After making these appetizers for two events in the past three weeks and receiving numerous requests for the recipe, I decided it was time to post it here.

Sweet Potato, Guacamole, & Shrimp Appetizers

Ingredients:

  • 1-2 Sweet Potatoes, long and about 1.5-2" in diameter

  • 2 Tbsp Butter, melted

  • 1 Tsp Sea Salt

  • 1 cup Guacamole (I used Wholly Guacamole brand, but you can make your own as well!)

  • 1 lb Medium Cooked Shrimp, tails removed

Directions:

  1. Preheat the over to 400 degrees. Line a cookie sheet with parchment paper.

  2. Cut the sweet potato into rounds about 1/8" thick. Lay out on the parchment paper in a single layer.

  3. Brush the sweet potatoes with butter and sprinkle with the salt. Bake in the oven for about 30 minutes, flipping halfway, until the potatoes are tender and cooked through. Let cool for 10-15 minutes if desired.

  4. Top the sweet potatoes with a dollop of guacamole and place a shrimp on top. Refrigerate or serve immediately.
