Parsnip Mash

I love veggies, especially if they are mashed or roasted. Those are my go-to ways to prepare vegetables to ensure that I a) eat them and b) make them taste amazing!
Recently, I bought some parsnips to switch up my regular routine of food for the week. I looked around for a parsnip recipe and came across one that was super simple and easy. Being the non-recipe follower that I am, I of course changed the amounts and ingredients to suit my needs and preferences. Because who wants to be told what to do, even if it's with a recipe?!
Parsnip Mash
Ingredients:
3-4 large parsnips, peeled and cut into 1/2" slices
1/2 cup full fat coconut milk (canned)
1/2 cup bone broth
1 tsp sea salt
Directions:
In a saucepan, combine the parsnips, coconut milk, and bone broth. Cook over medium heat, covered, for about 15 minutes or until the parsnips are very tender, stirring occasionally
Remove from the heat and place in a food processor. Add the sea salt, and process until smooth
Serve immediately or store in the fridge or freezer for later use
This mash pairs well with any meat and is best served with butter on top. Enjoy :)
