Roasted Green Beans


I have been loving the farmers markets this summer! Since I no longer have access to my own garden (which is so depressing...), I needed another way to get farm fresh produce for my weekly meals!

Lately, I've been roasting my green beans instead of just steaming them. This makes them slightly crispy and so good! Make sure to give them a try this week - with a bit (okay a lot!) of sea salt, these are addicting!

Roasted Green Beans

Ingredients:

  • 1 lb Green Beans

  • Sea Salt

  • 100% Pure Coconut Oil Cooking Spray or 1 Tbsp Coconut oil, melted

Directions:

1. Turn the oven to 400 degrees and line a large baking sheet with parchment paper 2. Cut off the ends of the green beans (if necessary) and scatter across the baking sheet, trying not to overlap the vegetables too much 3. Spray lightly with coconut oil spray and sprinkle evenly with the sea salt 4. Bake in the oven for 20-25 minutes or until the green beans are tender and slightly crispy 5. Remove from the oven and serve immediately, or cool and store in the fridge for up to 6 days
