Perfectly Roasted Carrots


The first recipe on Nourish & Thrive may be a simple one, but it is so delicious!

I took these Perfectly Roasted Carrots to Christmas on both sides of my family, and they received numerous raves, so much so that I decided to share the recipe.

This recipe is versatile and hard to mess up. As long as the carrots are tender and cooked through, you are good to go. Plus, they can be made ahead and stored in the fridge, covered, for up to four days (trust me though, they won’t last four days!). It is also a tasty way to add a simple vegetable side dish to your breakfast, lunch, or dinner!

The ingredients are interchangeable too: Don’t have broth? Use water. Don’t have real garlic? Use garlic powder or minced garlic. Want to make more or less than two pounds of carrots? No problem. Make this recipe your own!
